The histological characteristics of the digestive tract of the "sábalo" are described, and relationship between morphological details and functional meaning are suggested. The mucosa of the oesophagus is longitudinally folded and covered with stratified squamous epithelium with large mucous cells and mucous glands; taste buds are observed in the epithelium. The cardiac stomach has a simple columnar epithelium and gastric glands; the secretory cells of the gastric glands are not differentiated in oxintic or peptic cells. The principal characteristic of the pyloric stomach is the thick muscle layer; the mucosa layer is folded; gastric glands are also absent in thes region. The intestinal epithelium has columnar cells with a brush border, goblet cells and cellular migrants; intestinal glands are observed in submucosa layer in the second third of the intestine. The intestinal caeca are very thin; the epithelium is histologically identical to that of the intestine.
